This flatbread is the best that we have ever tasted thus far. The sweetness of the fig and the salty prosciutto (not overly salty) result in a surprisingly balanced and memorable flavour. The flatbread is perfectly made: not too crunchy to the point that it tastes like it is burnt and not too thick and chewy that it acts like a filler. The flatbread goes extremely well with a glass of wine, a casual ice tea or fresh fruit juice. It is not overly oily and the portion is just right for an afternoon snack or a light lunch/brunch. We highly recommend this flatbread: it is worth it to visit Olive’s at the Bellagio just for this exquisite dish!
